Well, your celery's gonna take the longest to cook, so I would saute' it with 1/2 an onion in a couple tablespoons of butter or olive oil, or best yet - bacon grease! You can even add some diced bacon to your soup.
Add a couple can's of chicken broth along with some potatoes, either fresh diced, or you can use canned.
Bring to a boil until your potatoes are soft, add a couple cups of half and half, or some milk. Thicken with some dehydrated mashed potatoes, or 1 tablespoon of cornstarch dissolved in 1/2 cup of water. You could thicken it with a roux of 1/4 cup flour cooked several minutes in 1/4 cup butter or bacon grease, then thinned with some chicken broth or milk.
This is a great commod recipe, with canned potatoes and dehydrated mashed potatoes, powdered milk, and canned milk.
