Spicy Tomato soup

1 can diced tomatoes with chilies
1 can crushed tomatoes
1 can chicken broth
2 tablespoons minced onion
1 tablespoon minced garlic
1/4 teaspoon dried oregano or italian herbs
2 Tablespoons sugar (or 3 packets Splenda)
1 cup cream (optional)

Mix and simmer all ingredients except cream for 1/2 hour to 1 hour. Add salt and pepper to taste. (Salt will depend on your broth.) Turn off heat and stir in cream (optional).

I can't believe tomato soup is SO EASY!!! And so delicious!

Served this with grilled cheese for everyone, except me. So I wouldn't feel left out, I fried up some "cheese crackers".

Using a GOOD non stick pan, heat to medium high, thinly sprinkle some shredded cheese in the pan and let melt and cook until crispy.

I made little ones to put in the soup. And a large one that made a good 'dipper'.
