Chile rellanos for dinner - some stuffed with just cheese, some my cheese mixture, and some with meat and cheese. And yummy homemade salsa.

OMG, I'm gonna make you guys all some chili rellanos. Please don't order them in a restaurant - you're likely to get an omelet with a chili in it. It's almost impossible to find one north of the Mason-Dixon line.

First take some fresh chilies - big medium-hot Anaheim chilies are good. Roast them, peel the skin, and de-seed them thru a slit on the side. Stuff them with cheese, dip them in batter, and either deep fry or fry in a skillet.

I've been hooked ever since I made them a few years ago. You can do the same thing with jalapenos, but they're a little too hot to eat very many

Thanks Wyo, I will have to try it, without burning my house down... LOL, nah I can cook, well sort of, well there was this one time when I managed to catch my entire steak on fire when I was broiling it.

As for the Mason-Dixon line, it technially only borders, PA, MD, DE, and WV, as it was just a survey line done by Charles Mason and Jeremiah Dixon to separate the American and British colonies. This I learned one day while so bored I watched a special on the History Channel on how the states got their shapes.

Years ago I was on a perfect margarita quest. Nowadays I'm on a chili relleno quest. The only "real" one in Wyoming (that I've found so far) is at Guadalajara in Casper.

My only modification is for the batter to omit the cornstarch and fold in the beaten yolks. (cuz I'm trying to eat low carb)

I set fire to a pizza once, but that was the fault of the oven in my apartment at the time. After 15 minutes, it burned everything. I learned not to bake anything that took more than 15 minutes to cook.

Well what happened was the fat on the steak had liquified (naw really...) so it was splashing up and it hit the broiler flame and ignited, so after this had happened enough the fat on the steak caught fire. Needless to say the steak did not tase so good after that.

LOL, can't really find good Mexican food here either, however because I live in an area that is largely Puerto Rican, I can find good Puerto Rican food.

Mmmmm. Rellenos!!!

I'm a hard one to please when it comes to Mexican food. Can't stand most Tex-Mex, because it uses way, way too much cumin. Interior Mexican is much better (imho).

When in San Antonio, check out Los Barrios - very, very good Mexican food. But go to the original one that's in an old gas station on Blanco Road, not the Hacienda Los Barrios. It's good too, but not as good as the original location.
If you like mole (the sauce, not the animal), theirs is excellent!

I'll put their recipe for Chiles Rellenos up in the Recipes section. My only quibbles are that they use poblanos, and I prefer a hotter pepper; and, depending on the filling and the type of pepper, I prefer a jalapeno/suiza sauce, rather than a red sauce.
