As to nostalgia

I have sold the Colt Python and the Remington 700 in .223.

I better stay with black powder and old cartridges, muzzle loaders and bow and arrows.

We are headed into our winter weather pattern, warm, then rainy with a side of cold. Supposed to hit 80 Sunday, rain Sunday evening and not even hit 60 on Monday. Oh well, beats shoveling snow. I'm seeing all this blowy snow on the news and it makes me cold just looking at it.

Glad to see everybody survived Black Friday if they were brave enough to venture out. I did some retail work when I was younger, and an am now forever traumatized about shopping on that day.

Edited to add: OLC, have you tried any arnica gel or cream? I love it for sore/bruised muscles.

Lots of cold rain. 46 F degrees. With all the rain, it feels colder. Measured the board of the bustle kit. Marked it for drilling. Did not try to eat out last nite with all the shoppers and traffic.

Went out "shopping" and got back with an engraved piece of metal.

Round Trip of about 540 km. Somehow I managed to drive at the right times. Very little traffic in the early morning and less than normal traffic in the late afternoon back.

This "Black Friday" has reached us now in full.

Weather is at the uncomfortable range of 0°C to 4°C with too much humidity.

BA, you have a mission. Now that advent has started, you must go to a Christmas market and eat a couple elisenlebkuchen with dark chocolate glaze and some nussecken for me. Nussecken I can make. But the other cookies need things you can't easily find in Texas. I can buy some imported ones at World Market, but they always seem to have taken a very slow boat from Germany, then sat in the Texas sun for a day and a half. I'd rather you just tell me how good they were, LOL.


For the uninitiated, elisenlebkuchen are a flourless cookie/confection made with eggs, sugar, hazel nuts, almonds, citron, candied orange peel, cloves, ginger, allspice, mace, cinnamon, green cardamon, coriander, and star anise. They are baked on an edible paper wafer and glazed with dark chocolate. Nussecken are a shortbread cookie with layers of apricot jam, caramelized hazel nut topping.

BA, how did Europe end up with Black Friday? I always thought that it was a American thing for the day after Thanksgiving.

Nussecken

Grease a 18 X 13 jelly roll pan and line the bottom with parchment paper. Preheat oven to 350F

In a food processor, grind enough hazelnuts (filberts or almonds work too) to produce 2 cups of nut meal. Finely chop another cup of nuts and set aside.

Mix:

1.5 c flour;
1 tsp baking powder;
1/8 tsp salt.

Add:

1/2 c sugar;
1 tsp vanilla extract;
2 large eggs (room temp);
1/2 c softened (not melted) butter.

Mix until combined.

Press the dough into an even layer in the bottom of the pan. Pierce dough with fork. Spread the dough with:

6 Tbsp apricot jam.

In a small saucepan melt (do not boil):

1 c butter;
1 c brown sugar;
5 Tbsp rum or water;
1 tsp vanilla extract.

When the sugar has dissolved, remove from heat. Add nut meal and chopped nuts and mix until combined. Spread over apricot layer.

Bake, 350F for 30 mins or until lightly browned around the edges and set in the middle. Cool completely, then refrigerate for several hours. Cut into triangles.


In a heatproof bowl in the microwave, melt:

1 c chopped dark chocolate;
1 Tbsp butter.

Dip the corners of each triangle into the chocolate. Cool on a rack until the chocolate is fully set. Store in an airtight container in a cool place.

These are better the day after they are cooked.

Nussecken recipe

A few years ago, I tried a couple new recipes to move away from my mother's recipe with margarine. I also wanted one that didn't have to be increased by 50% to fit my pan, LOL. I found this recipe at the blog Plated Cravings. I made three batches last year. Including one I shipped home to my folks.

Now these don't have the same texture or flavor as the ones made in Germany. The leavening agent frequently used in cookies in Northern Europe is salt of hartshorn (ammonium carbonate). In the North America we use various mixtures of sodium bicarbonate, calcium dihydrogen phosphate, aluminium sodium bis(sulfate) — water, and starch, instead. We won't even get into vanilla sugar....


Christmas cookie season is one thing about home I don't miss at Christmas. My mom developed a taste for French and German holiday sweets, when she spent a year studying in Europe during college. When she came home, she collected all these cookie recipes from the German, Swedish, Polish and Danish immigrants living in the area. A lot of these are profoundly labor intensive.

Further, my mom made massive amounts of cookies for church sales, neighbors and relatives. She took a Henry Ford approach to cookie manufacture; we'd have these assembly lines in the kitchen. Once you've painted meringue/sugar glaze on 12 dozen cinnamon stars, you don't want to ever see one again. I still can't eat a warm chocolate chip cookie, because I OD'ed on the smell of melted chocolate and browning margarine as a child, LOL.

I'm pathetic. I've planned the menu about 10 times already. I have gotten down to three permutations.

Elk roast and:

v1 -

Mustard cream sauce with sage;
sautéed spinach with garlic;
wild rice and mushroom dressing;
orange and jicama salad;
sweet potato muffins;
pumpkin pie.

v2 -

Cranberry chutney;
sautéed spinach with garlic;
cubed sweet potatoes with brown sugar, cinnamon and chile;
succotash;
blueberry muffins;
apple pie.

v3 -

Wojapi made with elderberries and blueberries (The food channel people may call this a reduction when they drizzle it across the plate and lay a slice of meat on top, but I know wojapi when I see it, LOL.);
sautéed spinach with garlic;
wild rice and mushroom dressing;
lima beans w/ bacon;
sweet potato muffins;
chocolate chess pie.

Any suggestions?

There are a few things i don't know in your menu.

Wojapi,succotash and jicama salade.

It's also my birthday.I'm almost on train 6.
