The latest installment of what can I make with long shelf life staples.


Chicken Tetrazzini

2 10 oz cans of chicken breast, drained;
1 4 oz can sliced mushrooms;
1 can cream of celery soup;
1/2 c chopped celery;
1 c sour cream;
2 Tbsp butter;
1 8oz package egg noodles;
1/2 c grated Parmesan cheese;
salt and pepper.

Preheat oven to 375 F. Grease a 9" x 13" baking dish.

Cook the noodles to al dente and drain. In a large skillet melt the butter and saute the mushrooms and celery until celery is transparent. Add chicken, soup and sour cream. Salt and pepper to taste.

Add sauce to noodles and spread evenly in baking dish. Top with cheese. Bake 20-25 min, until sauce is bubbling.

Schwarzwälder Kirschtorte

Cake -

1 3/4 c flour;
1 3/4 c sugar;
3/4 c Hersey's Special Dark cocoa powder;
1 tsp baking powder;
2 tsp baking soda;
1 tsp salt;
1 c butter milk;
1/2 c oil;
2 large eggs
1 tsp vanilla;
1 c strong hot coffee.

Grease 2 8" cake pans and line bottom with parchment paper. Flour pan with mixture of flour and cocoa powder. Preheat oven to 350F.

In a large bowl, mix dry ingredients. In a mixer, blend buttermilk, oil, eggs and vanilla. With the mixer on low, slowly add dry ingredients. Add coffee and mix well.

Pour batter into papers. Bake 30 mins, until a toothpick inserted in the center comes out clean. Cool for 10mins, before turning cakes out of pans and letting cool completely.

Filling -

2 14 oz cans sour cherries, drained reserving 1/4 c of liquid;
1 c sugar;
1/4 c cornstarch;
1 tsp vanilla;
1 Tbsp Kirsch;
1 Tbsp butter.

Place the drained cherries in a 2 qt sauce pan with sugar. Mix cornstarch with juice and Kirsch. Add to sauce pan. Cook over med until sugar is dissolved and mixture is slightly thickened. Stir in vanilla and butter. Set aside to cool completely.

Whipped cream frosting --

3 c very cold heavy whipping cream;
1/3 c powdered sugar;
3 envelops of Dr Oetker's Whip It.

Place the mixer bowl in the freezer for an hour or two before mixing. Mix the Whip it with the powdered sugar. Mix cream and sugar mixture. Whip on high for 3-5 mins until stiff peaks form. Place in fridge.

Assembling cake --

Slice cake layers in half. Crumble one layer to decorate the sides. Place one layer on a plate. Brush with Kirsch.

Place about 2 c of whipped cream in a pipping bag with star tip or a plastic bag with one corner cut off.

Frost first layer with cream. Pipe a thin rim around the outside edge. Spread with 1/3 if the cherry filling.

Top with a layer of cake. Brush layer with Krisch. Repeat frosting and cherry filling. Top with final layer of cake. Brush with Kirsch.

Frost edges and and top. Pipe a ring of cream around the edge. Spread on the remainder of the cherry filling. Pat crumbs on the side. Top with shaved chocolate.

Refrigerate covered, except when serving.


Th alcohol content makes this a grow-up cake. Omit the Kirsch for children.

Not me ! My life has not changed much. We don't go to town as often , but all in all we're doing everything we did before. I personally don't mind not being around others ! Most people are assholes ! They are selfish and un-caring for the most part. Then add in prejudice , racism , and perversion and you have most of the rest ! I've been to town twice in 6 weeks , maybe 3 times. Our freezer is full and our shelves are stocked. I'm not going anywhere unless we have to ! Stay in , stay safe !I miss seeing our daughter Jess and her kiddos , but we talk every few days anyway. All is well !We have our dogs and our horses and plenty to keep us from getting bored ! You all consider the others out there , Covid isn't gone , there has yet to be a vaccine ! If you get it , it will try to kill you ! If you're lucky you'll survive without some of the terrible after effects ! blood clots , internal organ damage , holes in your lungs , strokes or heart issues. This **** is real and it will kill you ! Do whatever you want , we will miss you !

I'm with you, WD.

My employer is still letting me work at home. I'm getting my groceries and everything else delivered. I drive to the post office outside drop box once a week. Then I drive around the neighborhood for a half an hour to keep my car battery charged.

Opps. I lost my train of thought. It was 'at 'at time.

A family moved into the obscenely over-priced, new build "reproduction" house two doors down. They moved in two days before the stay at home order. They have a toddler they walk up and down the block a couple times a day. She is fascinated by my outdoor cat, Jet. One day when Jet was off being a cat, I carried my Siamese to the window and waved at her. Now she drags her mom to the bottom of my porch stairs and yells " ' at! 'at!" until I bring Ishtato or Olivia to the window.

Locked in Wojapi Shortcakes

2 1/3 c Bisquick;
3 Tbsp sugar;
3 Tbsp butter, melted;
1/2 c milk.

Preheat oven to 425F. Line a cookie sheet with parchment paper.

Mix Bisquick and sugar. Stir in butter and milk, until just drawn together. Divide into 6 parts and spoon on to cookie sheet.

Bake 10-12 min, until lightly browned.


4 c frozen blue berries;
1/4-1/2 c. water;
zest of 1 lemon;
1 Tbsp lemon juice;
2 Tbsp cornstarch;
1/2 tsp nutmeg;
honey.


Simmer berries in water, stirring occasionally, until the berries start to breakdown. The quantity of the water will depend on how wet the berries are. Mash berries. Add lemon juice, zest and nutmeg. Sweeten to taste with honey.

Make a slurry of the cornstarch and 2-3 Tbsp water. Add to simmering berry sauce. Simmer with constant stirring until the sauce starts to thicken.

Mom likes this hot. I like it cold. It'sd best when you split the shortcakes and let the wojapi soak in.

Since Arrowmont School of Crafts has canceled its spring and summer workshops, I'm not getting to go this year. While the classes are always the highlight. I am going to miss a week of good food cooked by someone other than me. No homemade ginger peach jam. No roast beet salad. No cottage cheese, dill bread. No Ms Jenn's fantastic lunches. *Rose, who is so sick of her own cooking, weeps.*

At least I can make Miss Patsy's chocolate buttermilk cake. It's the second best dessert of the week. The blackberry cobbler with homemade ice cream is the best.

Well Rose , today we're keeping our heads down ! 70 mph wind and baseball size hail just about 20 miles north of us knocked out power for almost an hour ! Haven't heard about the damage done yet ! We have another round rolling thru in about an hour , then rain off and on the rest of the day. We just have to wait and see what develops !

Baseball sized is the stuff that fell in the April 2016 dawn hail storm. It totaled cars in a 1/4 mile wide, 7 mile long swath. Roofers were working for a year afterwards. (Weirdly, my roof was fine. But the paint was stripped off the south side of my house.)

Yeah , it did that around here a few years back ! Hit Ft.Scott terribly ! Every roofer from Tulsa , Joplin and all the way to K.C. was in the fort working ! We got a new roof that year as well ! Luckily today didn't amount to much here. North of us has a lot of wind damage. Trees down , electric down......from about 20 miles north of us all the way up almost to K.C. Even a tree across the train rails north of us somewhere ! The bad is over for today , just a few off and on showers the rest of the day.

Another workday at home, another meal in the crock pot. This one is going in the freezer for later.

Crockpot Buffalo Stew

1.5 lb cubed buffalo;
2 med. onion, coarsely diced;
2 stalks celery, diced;
2 c baby carrots;
1 lb baby red potatoes, washed skins on;
1/2 lb mushrooms, cleaned and quartered;
2 c veggie broth;
1 14oz can chopped tomatoes;
4 bay leaves;
1 tsp oregano;
4 juniper berries;
4-6 black peppercorns;
flour
salt.


Dredge buffalo meat in flour with a some salt mixed in. In a 6 qt crockpot, layer potatoes, onions, celery, carrots, and mushrooms. Put the buffalo on top. Add broth, tomatoes, and oregano. Tie up the bay leaves, juniper berries, and peppercorns in clean cheese cloth. Place in crockpot. Add salt to taste.

Cook on low 8 hrs. One hour before serving, stir and adjust seasoning. Obviously, remove spice bag before serving, LOL.

Well, this morning at 11:20am the Blue Angels flew over the medical district. Since I live right on the edge of the medical district I had a front row seat.

I had my phone all set up to take video when they came back over on the loop. I am terrible about hitting the wrong thing on the touch screen. I was very carefully holding my phone by the edges. This was when I discovered that my latest iOS upgrade made the volume controls switch between apps. I was suddenly in Apple Pay rather than camera! I have another video of my fat belly and feet while I mess with the camera settings.

I have these videos of my stomach and feet attending GON, visiting the Petrified Forest, traveling through Salt River Canyon, touring the Smithsonian Air Space Museum.... At least no one sitting next to me has to worry about me taking an embarrassing video of them. I'll be too busy filming my feet.

Fortunately one of my colleagues can use his technology.

Since the terrible accident at Ramstein, that is very limited in Germany.

The Bundesluftwaffe never had such an squadron.

I remember the Harrier at a show of the Britsih Armed Forces in my city, decades ago.
