Thumbs up Stuffing....

What goes in your "special stuffing"?

I like lots of chopped onion, celery, and sage.

I like other variations, but thats the one I like with turkey or pork.

i liked to put dried cranberries and almonds…or sunflower seeds. sometimes golden raisens with different nuts. all the dried fruit is first re-hydrated of course.

Okay, for those of you who sent me email requesting this here is my dressing receipe, and like I said, it's just written the way I do it, nothing fancy ....

I save leftover biscuits and cornbread in the freezer for a few months before Thanksgiving, well, year round actually because they can be ground up at any time to make nice toppings for casseroles, but specifically for this I save them in ziplocks in the freezer...I crumble them in the food processor or just grate them on the cheese grater if I only have a little bit to do, then freeze....

so, here's the receipe

1/2- gal biscuit crumbs
1 -gal cornbread crumbs
1/2- gal bread crumbs

6- eggs
1- 10 1/2 oz can cream of mushroom soup
1- 10 1/2 oz can cream of celery soup
1- 10 1/2 oz can cream of chicken soup
2-large onions diced
4-stalks celery diced
about 4 cans of chicken broth
Or I make my own, so whatever that amounts to
pepper and celery seed

2 - 1/2 steamtable sized aluminium pans

GO WASH YOUR HANDS


okay...get a really really big bowl...add all bread crumbs to bowl...put in a bit of celery seed until it smells nice, and a whole bunch of black pepper......add the eggs next, no shells please....and take your hands and squish it all up until the eggs are mixed in nicely.then, if you didn't read this receipe first, before you started, have someone else come open the cans of soup for you..add in the cream of something cans to the bowl of stuff..then..using your hands (YOU DID WASH THEM RIGHT???) squish it all together....squish it good...then add celery and onions....using your hands....mix it in good........then open pour in one can of broth at a time, until the mixture is the consistency of mixing concrete ...not too thick , not too thin.....add more broth if needed....if you pour it across your hands the sticky stuff will come off and you wont have to loose as much of your batter.....spray the aluminium pans with the no stick cooking spray and then pour the batter into the pans....

Bake at 400degrees until the edges are a pretty brown color, but don't over cook and dry it out.....
