I love simple recipes!

With the weather being so warm now - I enjoy frying corn with zucchini and adding a touch of italian seasoning or oregano! Yummie - it's one of those recipes that shouts to my family - IT MUST BE SUMMER!!!

What are some of your favorite recipes during the summer?

We love to steam clams, hard-shell crab, and whatever other edidbles we find on the beach, in a big pot. I add butter, salt, pepper, garlic, and corn on the cob to the water to make a delicious broth. Sometimes I add the seafood too, but that's hard to do becuz the family wolfs it down so quick!

Okay, Gumbo

In a large pot

1-2 tablespoons of flour and maybe 1/4 cup of oil. Mix them together a little at a time till you get a thin gruel kind of thing. KEEP STIRRING! Let it burn till it's dark brown and starts to smell pretty funky. Let it cool. You can add gumbo file or garlic, chopped onions after the flour and oil are mixed smooth.

Boil water. Add the water to the cooled mess in the pot on medium heat a little at a time. First the mess will start to grow and grow. Then all of a sudden it will fall. Do this whole thing slowly.

Now add. It doesn't really matter what you add or how much. Clams, shrimp, crabs . . . .have fun. Okra is "traditional" Corn on the cob goes in real good . . .
If you like chicken throw that in instead of seafood.

Let the whole mess cook. Chow down with some red beans and rice! :6: :7:
