My mom makes similar:
1/2 c. firm packed brown sugar 1/2 c. white sugar 1/2 c. quick oats 1/4 c. flour 1 stick COLD butter or margarine (butter is better :-) ) 1 tsp. cinnamon mix the dry ingrediants together. Slice the butter in pats into the bowl. Take two butter knives, one in each hand - stick them in the bowl starting with the blades crossed in an X. Draw them away from each other across the bowl - cutting the butter into smaller and smaller pieces (or if you have a "pastry knife" use that) until the butter is in small pea-sized lumps. Peel, core and slice 4-5 apples (enough to make about 2" of apples in the bottom of your pan) and put in a buttered 9 by 9 pan. Dump the topping on the apples and push it around until the topping is level. Bake at 350 deg. for 35-40 minutes or until the surface of the topping is firm and the apples are soft. |

I'm looking for some chayote squash to do an apple crisp, apple pie, or anything with apples. It's supposed to be a good low carb sub for apples.
Plus I'm dying for something sweet!!

Pears are high in carbs too. Most fruit is except berries and melons. There are lots of good substitutes though, like certain veggies.

wyo...they have those 'coyote' squash in stores around here. I know they put them in soup. Don't think they have a 'sweet' flavor. Actually, it's more like a squash flavor! LOL
