Baked Scallops

I never had scallops before, except the few large scallops that found their way into the Happy Family dish at my local Chinese restaurant, but bay scallops were on sale and I bought them!

There weren't many recipes made specifically for bay scallops, but this one turned out GREAT!!

* 4 tablespoons butter, melted
* 1 1/2 pounds bay scallops, rinsed, drained,
and dried on a paper towel
* 1/2 cup seasoned dry bread crumbs
(or Panko for a crispier crunch)
* 1 teaspoon onion powder
* 1 teaspoon garlic powder
* 1/2 teaspoon paprika
* 1/2 teaspoon dried parsley
* 3 cloves garlic, minced (or garlic powder, or OLD BAY)
* 1/4 cup grated Parmesan cheese

Directions

1. Preheat oven to 400 degrees F.
2. Melt the butter and coat the scallops.
3. Combine the bread crumbs, onion powder, garlic powder, paprika, parsley, minced garlic and Parmesan cheese. Roll the scallops in this mixture.
4. Place in a buttered casserole dish and sprinkle any remaining bread crumb mixture over the scallops. Drizzle any remaining butter over the top.
5. Bake in pre-heated oven until scallops are firm, about 20 minutes.

For a low carb version, substitute more Parmesan cheese for the bread crumbs.

DEELISH!!! A great appetizer.

Oh yeah, just crush up any old hard bread, or croutons. If your bread is kinda soft, put it in the toaster on a light setting and let it sit there for awhile to get nice and dried out.

Not the bread...I meant use the USED bag!!!

I used the bag to put in flour or corn meal to make sure fish pieces get breaded ALL over!
