Basic Rice Pilaf (Oven style)

In a medium saucepan, heat 3 tablespoons olive oil and cook 1 large finely chopped onion, stirring frequently, until translucent.

Add 1 cup long grain white rice and cook, stirring, over medium heat for 5-6 minutes until some of the rice grains look translucent.

Scrape the contents of the sauscepan into a 1-1/2 quart glass baking dish. Bring 2 cups of chicken stock (or you can use 2 cups water and 3 bullion cubes) to a boil and pour over the rice.

Bake, covered, at 350 degrees in a preheated oven for 30 to 40 minutes, until rice is tender. Remove from oven and let stand 10 minutes before serving. Fluff rice with fork and serve.
