Chicken with Veggies and Almonds Rice Pilaf (Stove Top Method)

Bake 1/2 cup almonds in a shallow pan in a preheated oven at 350 degrees, stirring occasionally, 5 to 10 minutes or until toasted.

Melt 2 tablespoons butter in large, heavy saucepan; add 8 oz sliced fresh mushrooms and 2 stalks of sliced celery, and saute 4 to 5 minutes, or until the celery is tender. Remove from pan. Melt 3 tablespoons butter in the saucepan; add 2 cups uncooked long grain rice, and saute 5 to 6 minutes, or until lightly browned.

Stir the mushroom mixture into the rice, add 3 10 oz cans of chicken broth concentrate, 3 cups cooked cubed chicken, 3 shredded carrots, 1 small can of chopped black olives (drained), salt and pepper to taste and bring the mixture to a boil. Cover, reduce heat and simmer 20 to 25 minutes, or until liquid is absorbed. Sprinkle with almonds before serving.
