Coolwhip cheesecake pie --5 min.

1 container sugarfree coolwhip--I use the large or even two
1 regular size box of cream cheese or neufchatel cheese (1/3 fat)
sugarfree flavoring syrup like Torani, or simply vanilla extract
1 graham cracker or graham cracker substitue pie shell--this can also be served as a parfait with fruit in a glass

In large bowl, combine all the coolwhip and the block of cream cheese and beat with beaters until all is combined. Flavor to taste with vanilla extract (about 1/2-1 tsp) or a tbsp or more of sugar-free Torani type syrup. You can also blend in Polaner all-fruit sugar free jam and fresh or canned fruit.

Pour into crust. Let sit in fridge for about an hour or so until it sets up and can be cut.

Top with sugar free compote or use in parfait, laying with fruit, more coolwhip.

Pretty edible and fast.

Watch out for Sugarfree Cool Whip, it has more carbs - 3 carbs per 2 tablespoons. Might as well use extra creamy cool whip that only has 2 carbs, or make your own whipped cream.

Have you seen the commercial - what do you want with your pie, oil or cream?

Sugarfree Goetsaap/Wojapi/Berry Gravy

2 cups fresh or frozen berries
1/4 cup - 3/4 cup alternative sweetener ... depending on berries
a quart water
Thickener:
1 Tablespoon agar agar, 1 Tablespoon Thicken/Thin Not sugar (discontinued), OR 1 teaspoon unflavored gelatin You can use 1 Tablespoon of cornstarch or flour, but those will move the carb count UP

Blend the berries with a cup of water in the blender, but leave it slightly chunky. Mix the thickener with 1 cup of cold water in a large saucepan and bring to a boil, turn to LOW and simmer for 5 minutes...except cornstarch or Thicken/Thin Not sugar which can thicken rapidly.

For the sweetener, I used 1/2 cup DaVinci sugar free raspberry syrup and 2 packets of NuStevia. I think 10 packs of Splenda would have worked as well. Sweeter berries would use less, and chokecherries might need more.

Pour in the berries and half the sweetener, turn up the heat and simmer for 10 minutes or so. Taste and add more sweetener if necessary.

Enjoy with frybread, or as a soup.
