Holiday favorites and recipes

I got a magazine today and it had holiday photos so I'm all in the mood now for Christmas. All the pretty candles and all. Then it got me to thinking about Thanksgiving and Christmas and all the happy memories. (didn't want to dwell on the sad ones.. i've done that for too long ;) )
Anyway... thought we could share stories of holidays past and what our favorites are and share some recipes!

Here is a really simple mint one!



Candy Mints Recipe

1 lb Powdered sugar
1/2 c Butter
2 tb Evaporated milk
4 dr Peppermint flavoring
2 dr Or more green food coloring


Combine all ingredients in bowl and beat at high speed until well blended. Knead until smooth. Shape mints in candy molds. Then place on cookie sheets which have been covered with paper towels. Cover with paper towels. Leave overnight to set. Makes 9 Dozen.

I also thought those that are not very skilled in the culinary department could share some of their holiday favorites and we might be able to help them find a recipe also the ones that have a long lost recipe. I know their are some here that have old family cookbooks.

MMM MMM MMM Its cookin time again... My youngest son is gong to be a chef... and he knows that I love anything pumpkin... so the other night he makes me some pumpkin soup....I had never had it before... It was the best tasting soup I have ever had.. here is the recipe..


onion
2 tbls butter
clove of garlic
can of chicken broth
salt and pepper to taste

mix the onion, butter, garlic, and chicken broth in a pan let simmer after boil for 15 min.


1 can solid pumpkin ( or real pumpkin)
one can of evaporated milk
1 tsp cinnamon
1 tbls of brown sugar

mix pumpkin and other ingredients together in a bowl..

take bowl ingredients and mix with simmering liquid ingredients.

stir until smooth .. do not boil simmer only....
you want to serve the soup warm not hot..

wonderful smell and taste.. something different to do with
pumpkin

Does anyone have a good popcorn ball one? My mother-in-law always made tons of em to give all the kids and grand kids. They were the highlight of the season. We'd much till New Year's. :7: She had her own recipe that called for white corn syrup, sugar, creme of tartar and vinegar. Unfortunately the recipe passed with her in '92. :( :Cry

Yes Mato my daughter has mine I will have her bring it or email it to me an I will send it to you . My kids fight over them yet an so do the grand kids . We also put pecans in them sometimes an dad loved the ones with walnuts .

Make sure you have a candy temperature thingy because the ball on the corn syrup is the key to the ball. This meaning for those that dont know is when the corn syrup is dropped in water it makes a little ball like a pea that means the syrup is ready if you dont have one of these candy thingies...

I remember my mom making some candy cane cookies. they were made out of like almost a sugar cookie dough (but softer) and you separated the dough and used food coloring to make one part red and left the other part white, and then rolled them into little rope and then twisted them together to make lil candy canes. it was a real tender cookie...but my favorite!! when i got older, i started making them myself for the family. those would have to be my favorite. also, one year my mom made divinity (I used to really like that too), but seh was using a hand mixer to beat the egg whites, and she burned out the motor on the mixer! :p i'll always remember that!!!

TRASH!

Here is a recipe for a treat I give out - people LOVE it!

TRASH

1 stick butter
1 large pkg. chocolate chips
1 cup peanut butter
2 t. vanilla
Melt together in big pan

Add the following and mix together until coated.

1 large box Chex cereal
1 can peanuts

Pour 1 box 10X sugar in trash bag. Add mixture and shake so that the trash is coated. Pour onto waxed paper to cool.

Most of the time I add the red and green M&M's. You can also add marshmellows but if you do that it has to be eaten within a day or so cuz they get stale. I use Holiday baggies or containers and give as presents. People LOVE it! Most of the time I use different varieties of the cereal and get the generic brand!

Mato..here's mine but it doesn't use cream of tartar..
wolftears is right you do need a candy thermometer..

white sugar syrup

stir until the sugar is dissolveed:
2/3 cup sugar
1/2 cup water
2 1/2 tablespoons light corn syrup
1/8 teaspoon salt
1/3 teaspoon white vinegar

then bring to a boil..cook covered for about 3 minutes until steam washes down the side of the pan.
uncover & cook , without stirring , nearly to the hard - crack ( you know all about the hard crack..;) :Chatter ) stage , about 290 degrees..

if your gonna add vegetable coloring add ALOT cuase the popcorn's so white..

2 cups brown sugar
2 sticks butter
1/2 cup light corn syrup
1/2 tsp. soda
pinch of cream of tartar
dash of salt
8 quarts popped popcorn
In heavy saucepan, mix the first 3 ingredients. Bring to a boil for 5 minutes, stirring constantly. Remove from heat and add last 3 ingredients. Fold into popcorn with wooden spoons.

Shape into balls with hands and place on waxed paper. Wrap individually to preserve freshness.

Tip: It helps to run cold water over hands before shaping balls.

Does anybody know how to make the soft popcorn balls? Some of them taste like Marshmallow cream with jello.:p

Once I found a recipe where you bone your turkey whole (except the legs), stuff it and bake it. When it's done you can just slice it like a turkey roll. It was delicious!!

And I think it's stuffing if it's cooked in the bird and dressing if it's not. I'd like to be able to cook some 'dressing' in the crockpot so we have extra, but it always comes out dry or in a solid lump. Anybody know how to do this?

wyo I cook stuffing outside the bird too . An what I do is this . I make the whole batch , after I stuff the bird take a layer of sliced bread lay in foil , butter it place the stuffing on that then make another layer over the top with butter again let that cook about 15 min take the top layer of bread off so the stuffing will get a little crust on it .. then until the stuffing is the browness you like bake some more .
I cook my bird in a Nesco cooker over night , so in the morning I can take him out cut off the bottom half an place that over the top of my stuffing in oven to make it like that in the bird .
But for those that dont have the Nesco I use the bread method.
