Oh and a hint: Most gelatins (like Jello) are NOT vegan. Many kosher gelatins, on the other hand, are vegan. Try Lieber’s unflavored gel, Emes Plain Kosher-Jel, Carmel’s unsweetened gel, KoJel’s unflavored gel, and Hain Superfruits.

depends on the vegan - there are "not eat anything that had a face" sort - known as ova-lacto vegans - these folks will eat eggs (any part) and milk.

Then there are the sort that will eat milk/milk products but not eggs.

Finally there are strict vegans who will not eat anything that came from an animal - including milk and cheeses.

I've always heard the terms used interchangeabley BUT according to the american heart association:

"The vegan or total vegetarian diet includes only foods from plants: fruits, vegetables, legumes (dried beans and peas), grains, seeds and nuts. The lactovegetarian diet includes plant foods plus cheese and other dairy products. The ovo-lactovegetarian (or lacto-ovovegetarian) diet also includes eggs. Semi-vegetarians don't eat red meat but include chicken and fish with plant foods, dairy products and eggs."

My old stand-by is ratatouille - tomatoes, onions, eggplant, summer squash, peppers - in whatever amounts you have or want - sautee it in a big pot in enough olive oil to cover the bottom of the pot until they get limp - add tomato paste and tomato sauce to get the consistency and taste you want, add herbs like oregano and basil. Serve it over pasta (for those who will eat pasta), or spaghetti squash, or baked potatoes, or put it on french bread topped with romano cheese and broiled lightly, or stuff it in pitas and sprinkle with parmesan, or mix in a little bread crumbs and stuff peppers with it, or whatever else sounds good. Nice, versatile stand by that has saved me with my vegan relatives more than once.

I NEED vegetarian meal ideas

How about:

I can El Pato Sauce
1 package of frozen peas & carrots
1-2 jalopenos (diced small)
1 can tomato paste
1 green bell pepper
1/4 of an onion
2 celery sticks
dice vegetables in small cubes
cook with favorite vegetable oil
mix in with El Pato sauce & tomato paste
Serve over steamed rice!

Oh, don't forget to add the frozen peas & carrots to the sauteed vegetables, El Pato Sauce & tomatoe paste and remember to let them simmer together for about 10-15 minutes, then serve over steamed rice...good eaten.. even better

INGREDIENTS
6 ounces frozen chopped spinach, thawed and drained
1 cup ricotta cheese
2 tablespoons sour cream
1/2 cup grated Parmesan cheese
1/2 cup shredded Cheddar cheese
4 eggs
1/4 cup milk
1/4 teaspoon hot pepper sauce
1 teaspoon ground cumin
1/4 teaspoon ground black pepper
1/2 teaspoon lemon pepper
2 tablespoons dried parsley
3 tablespoons salsa
DIRECTIONS
Preheat oven to oven to 375 degrees F (190 degrees C). Lightly grease one 12-cup muffin tin.
In a medium bowl, combine spinach, ricotta cheese, sour cream, Parmesan cheese, and Cheddar cheese.
In a small mixing bowl, beat eggs, milk, hot sauce, cumin, black pepper, parsley, and lemon pepper. Stir egg mixture into spinach mixture.
Spoon mixture into the prepared muffin tin. Bake in preheated oven for 20 to 25 minutes. Let stand for 5 minutes. Remove from muffin cups. Serve warm.

Pasta Primavera - frozen veggies boiled in tomato sauce seasoned with oregano & garlic and poured over spaghetti. Serve with french bread drizzled with olive oil and garlic. It's better with alfredo sauce, but some might not like the dairy.

Oatmeal cookies. I made them once without eggs and they turned out fine. The best recipe is the one on the Quaker Oat box. Minus eggs.

Minestrone soup: Start with a large can of mixed veggies, add a large vegetable broth, mix in some canned beans, and other canned veggies, along with some broken spaghetti pieces.

Vegetarian chili: Soak 4 pounds of beans overnight. Drain and rinse. Bring to boil in your largest pot, along with a gallon can of tomatoes, 4 chopped onions, 1/3 cup chili powder, 1/4 cup garlic powder. Boil about 3 hours. You can add some of the vegetarian crumbles (soy substitute for burger) the last 30 minutes of cooking if desired.

Vegetarian Indian Tacos: These go over great with white folks. Just heat canned vegetarian beans (or use leftover vegetarian chili). Since only half are vegetarian, you might let folks top their own frybread and have ground beef topping, or chili con carne available for those who want it. Along with shredded lettuce, cheese, olives, onions, jalapenos, salsa, sour cream, and other toppings.

You might want to do that with most of your food. Have a "regular" dish and then a vegetarian alternative available.

My son in law used to cook for the National Outdoor Leadership school where about half were vegetarians. Out of that half, half of those were ovo-lacto vegetarians, the rest were split between vegans and the lacto vegetarians. Meal time was very complicated because they cooked their "regular" dishes, had a vegetarian version which suited most ovo-lacto's, but for the vegans they usually had to come up with something totally different. He ended up hating vegans.

If you like sushi, try some vegetarian combo's, its one of my favorite thing. Also alot of east indian food is vegetarian as well.

I like a good ole chunk of meat every once in a while too!

Hmm-pesto is a mix of basil, olive oil and a bit of lemon juice and pine nuts blended till smooth. It could go on some type of beans, I guess, but I'd never have thought to pair the two. Maybe on cannelloni beans...

Goot point-neither are most drinks like beer and wine; vinters and brewmasters use bone and egg shell to refine the product. Then again, most Vegans I know will eat yeast, honey and other "live" foods with no problem though...LOL
