Mediterranean Squash in Foil

No dishes with this - just aluminium foil!

1 medium zucchini, halved and sliced
1/4 cup diced red onion
1/4 cup diced green bell pepper
2 (4 ounce) cans sliced black olives, drained
1/4 cup crumbled feta cheese
2 tablespoons Greek vinaigrette salad dressing
1/4 cup cherry tomatoes, halved

Preheat oven to 350 degrees F. Oil a 12" wide by 24 " long piece of heavy duty aluminum foil with a paper towel dipped in olive oil. Layer the zucchini, onion, pepper, and olives onto the center. Sprinkle with feta cheese, and drizzle with vinaigrette. Pull the long sides together and fold them, fold the ends over themselves towards the center - making a packet of foil.

Place packet fold side up in preheated oven until the veggies are fork tender, about 30 minutes. Open the foil packet down the middle (leaving the ends still crimped together), turn the oven onto Broil, and broil until the feta lightly browns.

Add the cherry tomatoes and serve.
