Pancakes - no milk, no eggs

2 mashed ripe bananas
4 cups water
1 cup uncooked quick cook oatmeal
3 cups whole-wheat flour
4 teaspoons baking powder
3 teaspoons cinnamon
1 teaspoon vanilla

Mix together the mashed banana and water (I use a food processor to get it all mixed up good). Add dry ingredients and vanilla and mix slightly with a fork until everything is wet. Don't overmix - the batter will be lumpy!

Pour 1/2 cup of batter into a hot, lightly oiled frying pan. When bubbles rise through the middle of the pancake and break on the top, flip the pancake and cook until browned underneath.

These are -very- filling. Top with cut fresh fruit (strawberries are great!)

Can you make them without banana's? which are not my favorite fruit in the least Sounds good

I have substituted 3 cups of applesauce and 1 cup of water for the bananas and water in the recipe. I imagine any mashed fruit that added/retained moisture would work.
