Porky Pine Meatballs with a bite - and no pork

I was wishing for porky pine meatballs for awhile now. I made some spicy ones and they were the BOMB! Then I told my daughter and she asked if I made them out of real porcupines!!! And she was serious!

1 1/2 pounds ground beef (or any combo of ground meat you like)
1 egg
1/4 cup rice - uncooked
1/4 cup bread or cracker crumbs
1/4 cup minced onion
2 tablespoons minced garlic
1 1/2 teaspoons seasoned salt
1 teaspoon pepper
Other seasonings to taste - but of course don't taste it!!
I put in some chili powder, red pepper, paprika, italian seasoning

Mix by hand, form golf ball size balls and place in baking dish.

Mix one package of brown gravy mix with 1 1/2 cups water, 2 tablespoons hot sauce, a little chili powder, and pepper. That gives it a kick and is optional.

Pour over the meatballs, cover loosely with foil and bake at 350 for an hour. Uncover and bake about 15 - 20 more minutes. Take one out and test to see if the rice is done.

If you use uncooked minute rice, you can probably get by with only an hour total of cooking time.

These were delishish and I already have a request for an encore.

Oh, man. My mom used to make these before she got all health-foody. I like your spice selection.

I'll have to make some after I finish messing will my buffalo stew recipe. I'm trying to make a lighter verision with wild-rice, carrots, and mushrooms. So I've been eating a lot of 'lo. These will be a nice change.

why are these called porky-pine, if they don't have porcupine meat in them? I'm serious too, my inlaws eat porcupine on occasion in Western Alaska. WW

Yeah, that's why. If you use long grain rice it sticks out nicely. I used short grain and they looked like porkies with a hair cut.

I don't think real porcupines would make good meatballs, but I'm sure they're good roasted, kinda like rock chuck????

I see, for some reason I couldn't picture that in my head. My inlaws love it; I'll eat it if I'm hungry, but don't care for the meat. It has a skunky odor to it; I do love eating beaver meat however. It tastes like a cross between deer and goat roast and its really fatty.
