Pumpkin Fry Bread
I have an old recipe my great-grandmother used, it is from the Micconsukee Tribe, I have no idea where she got it or how old it is, my Grandmother used to make fry bread at the stomp dances in Oklahoma and she made the best ever. She would make fry bread 3 times a day for us to eat, oh what a treat. 4 cups regular flour or self-rising 1 tablespoonful baking powder (if using regular flour) Grams used regular flour 1 16-oz can pumpkin NOT pumpkin pie filling 1 teaspoon salt 1 cup white or brown sugar - Grams used brown 2 cups corn oil 1. In large mixing bowl, combine 3-1/2 cups of flour with baking powder (if using regular flour) pumpkin and sugar. 2. Blend well and knead briefly, forking in the rest of the flour if needed or make a smooth dough. Refrigerate for 2 hours to firm up the dough. 3. Divide dough into fourths and knead each portion on a floured board or cloth for a few minutes 4. Using floured rolling pin, roll each portion into a cylinder 8-10 inches long. 5, Cut each cylinder into 6 or more slices 6. Flour each slice and form as you would form fry bread no more that 1/2 inch thick. Dough cooks faster if thinner. 7. Heat 3/4 inch of oil in a deep, heavy frying pan until oil begins to bubble 7. Fry the cakes in hot oil maybe 2-3 mins each side until brown flip to other side when both sides are brown Remove and drain on paper towel and serve with butter, honey or maple syrup, powered sugar, Yummy....... Enjoy |
