Ran out of condiments???

Ran out of any condiments lately?

Here's a recipe for some great homemade mayo.

1 egg yolk
2 teaspoons white vinegar
1 teaspoon water
1/4 + 1/8 teaspoon salt
1/4 + 1/8 teaspoon sugar
1/2 teaspoon bottled lemon juice
1 cup canola or soybean (vegetable) oil

There are 3 ways to mix it.

#1 Pour all into a blender and blend until thick and off-white in color.

#2 Pour into a large jar. Mix with hand blender starting at bottom and working your way up.

#3 Whisk the egg yolk by hand for 15 seconds. Combine the rest of ingredients except oil in a separate container until sugar is dissolved. Now get ready to whisk non-stop. Pour half the mixture into the egg yolk while whisking. Start drizzling in some oil very slowly while whisking away until you get half the oil incorporated. Whisk until very thick. Pour in the last half of the vinegar mixture. Keep whisking. Drizzle in the last half of the oil and whisk until thick and off white in color.

Keeps up to 2 weeks in the refrigerator. Don't worry about the uncooked egg yolk, the vinegar and lemon juice takes care of it.

Or if you're a Miracle Whipper, follow the same directions with this recipe:

1 egg yolk
1/4 teaspoon dry mustard
5 teaspoons white vinegar
4 teaspoon sugar
1/4 + 1/8 teaspoon salt
1/2 teaspoon bottled lemon juice
1 cup oil
pinch paprika
pinch garlic powder

Run out of Ketchup??

1 6 oz can tomato paste
1/2 cup light corn syrup
1/2 cup white vinegar
1/4 cup water
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon onion powder
1/8 teaspoon garlic powder

Whisk all ingredients in saucepan until smooth. Bring to a boil and simmer for 20 minutes, stirring often.

Cool and keep in covered container in fridge.

Hot Bean Dip:

1 15 oz can pinto beans (or vegetarian beans)
4 jalapeno slices (bottled or canned)
1 tablespoon juice from the bottled jalapenos
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon onion powder
1/4 teaspoon paprika
1/8 teaspoon garlic powder
1/8 teaspoon cayenne pepper

Put in blender or food processer and blend until smooth. Chill before serving if desired.

BBQ Sauce:

1 cup ketchup
2 teaspoons water
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/4 teaspoon salt
1/2 teaspoon Tabasco

Combine in sauce pan, bring to a boil and simmer for 5 - 10 minutes.

Horseradish sauce:

1 tablespoon white vinegar
4 teaspoon sugar
1/8 teaspoon salt
1 cup mayonnaise
2 tablespoons + 2 teaspoon prepared horseradish

Pour sugar, salt and vinegar into blender. Swish until dissolved. Pour in rest of ingredients and blend for 15 seconds or until well incorporated.

Chill for at least an hour or two for flavors to mingle.

2 tablespoons French dressing
4 teaspoons sweet pickle relish
1 tablespoon minced white onion
1 teaspoon white vinegar
1 teaspoon sugar
1/8 teaspoon salt

Best Ranch Dressing ever:

1 teaspoon Hidden Valley Ranch Dressing Mix - buttermilk recipe

1 cup mayonnaise
1/2 cup buttermilk
1/4 teaspoon coarse grind black pepper
1/8 teaspoon red pepper (or paprika)
/18 teaspoon garlic powder

Combine, cover and chill at least 30 minutes.
