Sugar Free Key Lime Pie

I looked at several recipes on the web and modified some to come up with my own. Turned out pretty darn good.

1 small package Sugar Free Lime Jell-O
2 8 ounce packages cream cheese
1/3 cup lime juice
1 tablespoon lime zest
1/2 cup boiling water
1/2 cup cold water
1/2 cup cream
12 packets Splenda or other artificial sweetener
3 tablespoons butter
1 cup of ground pecans, or ground almonds
Ground flax seed and/or wheat germ optional

This pie consists of 3 parts: crust, filling, topping.

For the crust melt 3 tablespoons butter and mix in 3 packets of Splenda or other sweetener. Then add in any combination of ground almonds, ground pecans, wheat germ, ground flax seed to make one cup. I think ground pecans are best, but I used ground almonds last night with a couple tablespoons of wheat germ and ground flax seed to round it out. Mix well and press into a 8 inch pie pan. PLace in refrigerator.

For the filling boil 1/2 cup water and mix in one small package sugar free lime jello until dissolved. Add 1 tablespoon lime zest and set aside.

In a mixing bowl, beat 2 - 8 ounce packages cream cheese until smooth (you can nuke them for 2 minutes if it's straight out of the fridge), then mix in 1/3 cup lime juice (my local Safeway started selling the tiny key limes - I'm so excited), and 6 packets sweetener. Slowly pour in the jello mixture until incorporated. Then mix in 1/2 cup of cold water all at once.

Pour into pie crust and refrigerate at least one hour.

For the topping, beat 1/2 cup heavy whipping cream with 3 packets sweetener. It only takes a couple minutes by hand with a whisk.

I've seen a couple recipes that mix the whipped cream into the filling before pouring in the pie, but I like mine on top. Some also add coconut extract, so if you want that flavor add 1/2 teaspoon to the filling.
