The Lazy Texan's Snack;

Spread a softened 8 oz block of cream cheese into a 1/2" thick circle on a plate. Top liberally with Fischer & Wieser Razzpotle Raspberry and Chipolte sauce.

Serve with crackers. Stand back.


Last time I made this, I found one of my guests in the kitchen -- licking the plate.

Want nuts?

Gingered nuts (adapted from, I hate to admit it, Martha Stewart's Everyday Food)

Preheat oven to 350F

Mix in a heatproof bowl:

3 c cashews;
3/4 c finely minced candied ginger;
1/2 tsp ancho chile powder;
2 1/2 tsp kosher salt;
1/4 tsp black pepper

Boil for 3 mins, stirring occasionally:

1/3 c sugar;
1/3 c water.

Pour syrup over nut mix and stir, to combine.

Spread in single layer on parchment paper lined cookie sheet. Bake for 15-20 mins, until nuts are golden brown. Cool. Break into pieces.

Spicy Sweet Nuts

Preheat oven to 350F. Line a baking sheet with foil and lightly coat with cooking spray.

In a heatproof bowl mix:

1c each pecans, walnuts, cashews and almonds

Toss nuts with:

1 tsp kosher salt;
1/2 tsp cinnamon;
1/2 tsp cumin;
1/2 tsp chile powder;
1/4 tsp chipotle chile powder;
1/4 tsp nutmeg;
1/4 tsp cayenne pepper.

Heat in small saucepan over medium heat.

1/2 cup sugar;
1/4 c water;
1 Tbsp butter.

After the butter melts, cook for 1 min or until all the sugar has dissolves. Pour the syrup over the nuts and stir to coat.

Spread nuts in a single layer on the cookie sheet. Bake 10 mins. Stir, making sure all the nuts are coated with syrup. Bake until nuts are roasted, about 6 mins.

Cook and break into pieces.

Ranch Popcorn

8 c freshly popped popcorn (ca 1/2c un popped.)

Mix well:

2 Tbsp buttermilk powder;
2 tsp dill;
1/4 tsp garlic powder;
1/2 tsp onion powder;
1/4 tsp ground black pepper.

Drizzle 3 Tbsp melted butter over the popcorn (less for oil popped popcorn). Toss to mix. Sprinkle on spice mix, tossing to coat. Salt to taste.

Sage and Asiago Cheese Ball

In a small mixing bowl, soften 8oz cream cheese.

Stir in:

1 tsp ground sage;
1/4 tsp fresh ground black pepper;
1/8 tsp cayenne pepper;
1/4 c grated asiago cheese;
salt to taste.

Place mixture on a sheet of plastic wrap, pull up the edges to form the cheese into a ball. Wrap and refrigerate overnight to blend flavors.

Before serving:

Toast 1/4c pumpkins seeds in a dry skillet over medium, until they brown and begin to pop. Crush the cooled seeds into coarse bits. Roll the cheese ball in them to cover.

Serve with crackers.

OMG, There's a Car Full of People in My Driveway and They Need Dinner Stacked Enchiladas

In a saucepan pan mix:

1 can Campbell's cream of chicken soup, cream of mushroom or celery work in a pinch;
1 can water;
2 4 oz cans of green chiles, pureed if you have time;
1/2 tsp cumin;
1/4 tsp garlic powder.

Simmer until heat through and smooth. Cool, at least until you don't burn your fingers.

Mix:

1 12 oz can cooked, white meat chicken, drained;
1 small onion, chopped;
1 1/2 c shredded pepper-jack cheese or whatever kind of cheese you have in your fridge;
ground black pepper.

Thinly coat the bottom of a 8x8 baking with the green sauce. Cover with a layer of corn tortillas, tearing one up to fill the gaps. Cover with a thin layer of sauce. Top with 1/2 of the chicken and cheese filling. Cover with tortillas. Spread tortillas with a thin layer of sauce. Cover with remaining filling. Top that with another layer of tortillas. Spread on remaining sauce.

Bake 350F for 30 mins. Remove from the oven, top with cheese. Bake another 15mins -- you'll need the additional time to throw instant pudding and cool whip in goblets and pretend its a parfait :)

Welp, it was Mississippi Gumbo for my Super Flop Super Bowl.

About 20 spices, bunch of everything good, served with rice .

I had worked night shift, so I passed out from the full belly ,

woke up during 4th quarter to watch the crazy ending.
