Sweet Potatoes, Anyone?

Sweet Potatoes, Anyone?
I have 18 pounds of fresh sweet potatoes to experiment with.
I've got a couple of recipes I know I'd like to try but does anyone have anything that doesn't involve mini-marshmallows and orange juice? |

cook your potatoes,peel and cut and layer the bottom..add brown sugar, syrup,butter slices (any kind of syrup will do) repeat till pan is full..bake at 350 till all is melted and warm thru..if you would like you can add coconut instead of marshmallows...will be a hit with the fam guaranteed..lol well my family loves them.. i am allergic to oranges so i could never make a recipe that has it in it..

Sweet Potato Pie
2 cups boiled and pureed Sweet Potatoes (can substitute Pumpkin) 1 box silken tofu (don't tell anyone it has tofu, they'll never guess) Mix in a blender or food processor. Remove to a bowl and mix in 2/3 sugar, 1 t. vanilla, 1 t. cinnamon, 1/2 t. ginger and 1/4 t. cloves or allspice depending. Bake in a pie crust for 25-30 minutes. If it starts to crack, it's setting Cool thoroughly. Keep in fridge.

Served as a garnish I enjoyed these diet friendly sweet potatoes more than the entrée .
Sweet potatoes were sliced into strips a little thicker than 1/4 inch, brushed with olive oil. salt and peppered and grilled. I've tried this at home and found they are good at any stage of "doneness" though I prefer them on the crisp side. Enjoy, KitchenFireMom |

I hear ya on the food allergies, Kidz. I'm not allergic to OJ (thankfully) but I just don't like it in the sweet potatoes. Ditto the marshmallows.
Wyo - not sure about the tofu - but I'll try anything once. Food allergies dictate leaving out the cloves/allspice - maybe I'll use brown sugar and a little more cinnamon instead to give the pie a fuller flavor. The grilled sweet potatoes sound goot too. So far we've had them baked in the skins and served like regular baked potatoes and whipped (nothing added) with butter on top. I've got a good looking Polish sausage 'n sweet potato casserole we're going to try after turkey day. I'll post that one up if it gets taste tested successfully. Boston Market (a chain fast food place) has been serving mashed sweet potatoes with a "crisp" topping (brown sugar, butter and oatmeal - like you would for a pie) as a side dish. It had allspice in it so I only could take a teeny taste - but it sure was interesting. We're trying that one on thanksgiving. |

My hubbies family cuts them like french fries, or lil slabs and frys them in butter, then they salt and pepper them, id never had them that way but i find them yummy..
