Well, if you want tripe you can't go wrong with menudo. I like it but I don't eat the tripe. And I don't want to cook it in MY house.

My granny-in-law burnt (REALLY BURNT!) turkey broth and giblets at Christmas time. Her whole house smelled like menudo.

I'll look for my recipe.

yep! menudo the stuff. Otherwise you can clean some tripe really well (get all the green out) and boil with some potatoes, carrots, onion, corn, green beans. Chop a fresh garlic clove and boil with the meat before you add the veggies. Carrots go in first; when they are more tender add corn and beans. potatoes go in last.

Mmm...that recipe sounds like it would be great with the Bible. That's the only kind of tripe I like.

And NO green floaties!! It's bad enough the bible is greenish!

2 pounds ox tails, disjointed
2 tablespoons vegetable oil
8 cups water
4 cups beef broth
pinch of salt or to taste
1 teaspoon pepper
1/4 cup fresh parsley, chopped
2 carrots, peeled & chopped
1 celery stalk, chopped
14 ounces whole tomatoes, drained
2 bay leaves
1 teaspoon dried thyme, crushed


in a big pan, brown the ox tail's thoroughly in oil. till brown
Add water, broth onion, garlic, celery, tomatoes, carrots, parsley, bay leaf, thyme, salt, pepper

Cover and simmer for 3 hours.
Remove bay leaf, and cool slightly. Remove ox tails and trim fat off, remove meat from bones, discard bones, add meat back to soup. Skim any excess from the soup as it cools.
Reheat and serve.
