Anybody have a great ground buffalo recipe?

    Thanks guys! I made buffalo spaghetti last night lol....had to do something fast and it was perfect. I still have some left for next time. Its expensive at the store I get it at.....but it doesnt mess with my stomach as much as beef does (sensitive stomach....it sucks). I was never sure bout buying it cause I didn't know how to prepare it. Now I do thank you...taught this Cali girl somethin new.

    You can really use buffalo for any beef recipe. Just remember to cook it from low to medium and don't rush it. It will dry out and get tough due to the low fat content.

    We have some hump ribs (and side ribs that look like the Flintstone Brontosaurus ribs) and can't wait to try them.

    Now this is not for ground buff, but it is still good.

    2 lbs buffalo brisket or roast, cut into 1.5 - 2" cubes;
    6 c buffalo or beef stock;
    1 onion, diced;
    4 carrots, peeled and sliced;
    3 med. potatoes, peeled and cubed;
    1 c. wild rice;
    1/2 lb mushrooms, sliced;
    1 c. frozen corn;
    1 bay leaf;
    1/2 tsp thyme;
    4 Tbsp flour
    salt & pepper.

    Dust the meat with the flour, salt and pepper. Mix stock, meat, onions, carrots, potatoes, bay leaf & thyme in a 6qt crockpot. Add extra water if needed to just cover the contents. Cook on low for 10-12 hrs. About 4 hrs before serving add the wild rice and mushrooms. One hour before serving add the corn.

    If it is impractical to add the rice and mushrooms in the middle of the day, you can use canned mushrooms and cook the rice. Then add them at the same time you add the corn.

    If you use timpsila, omit the carrots, potatoes and bay leaf (makes a real funky taste).

    Serves 8 (or 4 grad students).

    A neighbor gave us a few pounds of ground buffalo a while back and it was really good browned and then stirred into spaghetti sauce - just regular Ragu, Prego or ALDI brand, 1 pound of meat with 1 jar sauce.

    I have also used it to make chili - 1 pound ground buffalo, 1 large can of black beans, 1 large can chopped (or just stewed) tomatoes, 2 small cans of tomato sauce and then your chili seasoning. I actually buy mine. I think it's called "Two-Alarm Chili" and it's nice because each spice is individually packaged, including the salt and chili powder, and you can add them to taste. I brown the ground buffalo first, then throw everything into the slow cooker for about 6 hours. Really good with homemade corn bread or muffins...

    Now, I'm getting hungry!

    YES, this one works with ground moose too. Mix together 1 pound ground buffalo, 1/2 med onion, and 1 large shredded potato, use seasonings that you enjoy. Form into small 1/4 lb patties and fry. Very Goot!
