I never heard of vodka sauce, but once I tried it - I'm HOOKED!! (What is it with these alcohol based recipes???

You can buy Vodka sauce in the spaghetti sauce aisle of a lot of groceries, like Safeway....but homemade is BEST!! And by the time it's done cooking, lots of the alcohol is evaporated. It's a myth that ALL the alcohol will cook out of recipes, cuz that's what gives it the flavah!!
1 Qt. spaghetti sauce, marinara, or homemade tomato sauce
1 cup vodka
1/2 cup heavy cream
1/2 cup parmesan cheese
Simmer the spaghetti sauce and vodka about 20 minutes until reduced by 1/4. Add the heavy cream and bring back to a simmer. Turn off and stir in the parmesan until melted and well blended.
Toss with 1 pound of penne pasta, cooked al dente. Note: if it sticks to the wall when you throw it, it's TOO DONE!!
Actually tasting a piece every couple minutes is the better way to check.
