    Beef and Mushrooms over Rice

    3lbs round roast, cubed and browned;
    1 can Healthy Request Cream of Mushroom soup;
    1/2 envelop of onion soup mix;
    1 6oz can of mushrooms, drained;
    4 oz sour cream;
    water;
    black pepper.

    2 boxes of Long and Wild Rice mix.

    Preheat oven to 350F. Place browned meat in small roaster or 3qt casserole dish. Sprinkle meat with onion soup mix. Add soup and 2-3 cans of water. Add mushrooms and stir. Cover tightly and bake for 2-3 hours until meat is tender.

    Prepare rice. Stir sour cream into meat just before serving. Serve over rice.

    If you expect to have leftovers, do not add the sour cream to that portion. On reheating the butterfat will separate from the sour cream and need to spooned off.

    This is not fancy, but is good.

    Green Chile Mac

    3 c. macaroni, cooked and drained;
    3 Tbsp butter;
    1/4 c flour;
    1 1/2 c milk;
    8 oz Velveeta, cut into cubes;
    1 c shredded cheddar;
    1/4 c parmesan cheese;
    1-2 4 oz cans green chile, drained;
    1/4 tsp cayenne pepper;
    1/2 tsp garlic powder;
    black pepper;

    Melt butter and add flour. Cook over medium heat, stirring constantly until flour is very lightly browned. Slowly add milk and cook until mixture begins to thicken. Add Velveeta. Once melted, add other cheeses. After the additional cheese melts, add cayenne, black pepper, garlic powder, green chiles, and macaroni.

    Transfer to greased casserole pan. Bake 350F until mixture is heated through.

      Emergency Side Dish or for a Carry-In

      Broccoli-Cheesey Rice

      2 cups cooked rice
      1/4 pound Velveeta or 1 jar Cheez Whiz
      1 package frozen broccoli florets

      Chop the broccoli. Mix all the ingredients and bake in a casserole dish for 30-40 min at 350.

      Quicker: Microwave the broccoli until done and melt the cheese before mixing. Bake for 15-20 minutes.

      Slow cooker: Double the recipe and cook in the crockpot. High 2-3 hours. Low 4-6 hours.

        Chicken Alfredo -

        4 Chicken Breasts - cooked (boiled, baked, or bought already cooked)
        1 jar Alfredo Sauce
        4 packets Alfredo Sauce Mix
        4 cups milk
        1 package home style egg noodles (cooked to package directions)
        or homemade Easy Egg Noodles (in Recipe Index)
        Optional for Pasta Prima Vera - frozen broccoli, cauliflower, carrots
        1 packet monzarella cheese, shredded

        While the noodles are cooking, mix the alfredo packets with the milk and 1/4 cup optional butter, and bring to a boil. Add in the jarred alfredo sauce.

        In a greased lasagna pan, mix the noodles with half of the cheese and half the sauce. Mix in the veggies, top with the diced, cubed or shredded chicken, then the rest of the cheese and the rest of the sauce.

        Bake at 350 for 45 - 55 minutes.
