  • Kid-friendly Acorn Squash

    In a large bowl toss:

    2 acorn squash, peeled, deseeded and cut into 1/2" thick rings;
    2 tsp cinnamon;
    1/2 tsp ground ginger;
    1/4 tsp ground cloves;
    1/4 tsp ground Chimayo chile;
    1/2 tsp sea salt;
    1/4 c raisins;
    1/4 c brown sugar;
    ground black pepper.

    Place in a 9 x 13 baking dish. Add:

    2-3 Tbsp water;
    1 Tbsp butter, cut into tiny cubes and dotted throughout the squash mixture.

    Cover tightly with foil. Bake 350 for 45 mins, stirring once halfway through. After 45mins uncover, sprinkle with 1/3c chopped pecans and bake 10 more minutes.

    You can do the same thing with pumpkin. I increase the ginger a 1/4-1/2 tsp, since pumpkin goes nicely with ginger.
