    OK, I lied. More pumpkin recipes

    2 c raw, shelled pumpkin seeds;
    2 tsp olive oil;
    1 tsp wasabi powder;
    3/4 tsp ground coriander;
    2 tsp kosher salt.

    Toss the pumpkin seeds with oil. Spread in a single layer on a cookie sheet. Bake at 350F for 10-15 mins, stirring every 5 mins until just brown. They burn easily so watch them carefully the last 5 mins.

    While still warm, sprinkle the seeds with the spices and salt and toss to coat.

      Pumpkin Sheet Cake

      Preheat oven to 350F. Grease and flour a 9" x 13" pan.

      Beat together:

      1 (15 oz.) can of pureed pumpkin;
      4 eggs;
      1 2/3 c sugar;
      3/4 c vegetable oil;
      1/4 c water.

      In a separate bowl mix:

      2 c flour;
      3 tsp cinnamon;
      2 tsp baking powder
      1 tsp baking soda
      1 tap NaCl.

      Add the dry ingredients in two batches to the pumpkin mixture. Blend until smooth.

      Stir in 1/2 c blonde raisins.

      Spread evenly in pan and bake for 25-30 min, until a toothpick inserted in the center comes out clean. Cool.


      Frosting --

      Beat together:

      4 oz of softened cream cheese;
      1 stick softened butter;
      1 tsp vanilla;

      Add in 1/2 c increments 2 c of powdered sugar. If too stiff add a few drops of milk. If too soft add powdered sugar 1 Tbsp at a time.
