If it is they are so good but wow, can you say lumps in your jeans? ROFLOL, mashed potatoes do not look good in my 501's. Gosh, you can tell it's almost holidays eh? I'm thinking of turkey, mashed potatoes, broccoli casserole, green bean casserole, pumpkin pies, pecan pies, all those good foods. Unfortunately, I'll be the only one serving holiday food this year in my family. For my daughter. The rest are traditionally mourning for my brother so they won't celebrate at all. :( Part of me wants to do that out of respect and missing him but I know I have to create memories for my daughter. Wish I could just go away to someone elses house for the holidays :) My Mom is sad everyday - wish I could be there with her. Well, back to the kitchen.

Good morning, all
All this talk about good food and recipes has got me hungry. I'll take some extra crispy bacon and a cup of tea.
And if you have a good chicken enchilada recipe, I'd like it. Mine never turn out very good.
Red, I hope you're daughters OK and luckily the worst is over. And good mama, for sticking up for her so well....it is what it is...

OK, these biscuits are soooo yummy and sound too easy to be that great. But they are. They are from an older lady I know, named Eulala.
Take 1 stick of butter (softened) , 2 cups of baking mix, and 1 cup of sour cream. Mix them all together (I've mixed it by hand as well as used a mixer when I had it). Then fill muffin tins about 1/2 - 2/3 full of the mixture. Bake at 350 for 15 - 20 minutes.

mm, those sound good Traci - good morning Wyo_rose, how are you??? Here's your bacon and tea. How's the honey? I've got a good enchilada recipe at home, I'll get it for ya - I don't have it memorized :). I do have a really easy mexican casserole dish, it's really good too. All you do is brown a lb or a little more of ground beef, drain and add two cans of ranch style beans, a can of cream of mushroom soup and a can of cream of celery - mix it all together and take CORN tortillas and line your 9 x 13 pan with the tortillas, pour in the mixture and bake about 20-30 minutes then top with cheese and melt the cheese and it's done. And it's delish with a salad and ranch dressing. Easy and good :)Don't bring a JV player into my Varsity Game...

I love Ranch Style Beans!!! I grew up just a couple of blocks away from the Ranch Style Bean factory, and you could smell them cooking at the factory. Memories!
I have a similar recipe, Red. . .you brown your ground meat (however much you want to use--I used between 1 lb and 2 lbs). Then take flour tortillas, enchilada sauce (the red kind that you get in a can. I use Old El Paso brand, but I don't know if you have that up there), and grated cheddar cheese. Then layer in a casserole dish. . .tortilla, meat, cheese, then pour on some sauce, tortilla, meat, cheese, sauce. . .you get the idea. Bake at 400 or so until the cheese is melted.
I think a similar recipe is on the enchilada sauce can, but my husband's bachelor friend got lazy and said "I'm not rolling up each enchilada. I'll just layer it instead." So, we call them Kevin Enchiladas at our house. :)

Traci, I love ranch beans too!! They're my fav, awesome flavor - I use them in my chili too. Have you ever made the catalina salad? It's a salad, add a can of drained ranch style beans, then crunch up tortilla chips and add catalina dressing, it's gooT!!!!Don't bring a JV player into my Varsity Game...
