            YIKES, I remember my wisdom teeth being removed at IHS! HORRIBLE experience, and there were shards of teeth or bone coming out of my gums for years!! UGH!!

              • Thanks for the well wishes for the kid. This morning's report was that she wasn't in too much pain (just sore around the injection sites) and is feeling pretty good. Not much swelling either so it looks like all is good to go for her flight.

                • That's good to hear. I hope the flight won't aggravate her pain.

                  One of my oldest daughters got sent home from school (where she works) yesterday with strep throat. She went to the doctor, got on her meds, but had to go to the ER last night cuz she couldn't hardly breathe!!

                  And here I am, eating Christmas candy, instead of going out to get a proper lunch.

                  Poor thing still has to go to BBall practice (where she coaches), even though school is cancelled!

                              • Okies.. for all the sickies, I made some Mulligatawny soup and bannock.

                                1/4 cup vegetable oil
                                3 cups chopped onions (about 1 pound)
                                5 garlic cloves, chopped
                                1 1/2 tablespoons garam masala
                                1 1/2 teaspoons ground coriander
                                1 teaspoon turmeric
                                1/2 teaspoon cayenne pepper
                                2 bay leaves
                                2 cups dried red lentils
                                8 cups low-salt chicken broth
                                2 cups diced cooked chicken
                                1 cup canned unsweetened coconut milk
                                3 tablespoons fresh lemon juice
                                2 cups cooked basmati rice
                                Lemon wedges

                                Heat vegetable oil in heavy large pot over medium-high heat. Add onions and cook until golden brown, stirring frequently, about 15 minutes. Add garlic and sauté 2 minutes. Add garam masala and next 4 ingredients; stir 1 minute. Add lentils; stir until coated. Add chicken broth. Bring soup to boil; reduce heat to medium and simmer until lentils are very tender, about 20 minutes. Discard bay leaves.

                                Working in batches, puree soup in blender until smooth. Return to pot. Stir in chicken, coconut milk, and lemon juice. Season to taste with salt and pepper.

                                Divide rice among bowls. Pour soup over. Garnish with lemon wedges; serve.

                                For the diabetics, I made some sugar free Christmas cookies:

                                CREAM CHEESE COOKIES (DIABETIC
                                COOKIES)

                                1 cup butter, softened
                                1 8 oz. pkg. cream cheese, softened
                                2 cups flour
                                Sugar substitute (for baking)
                                1/4 tsp. salt
                                Dried fruit

                                Mix first four ingredients. Refrigerate.
                                Roll out on a lightly floured work surface and cut into small circles.

                                Wash and dry fruit (apricots, dates, peaches, or prunes, etc. may be used). Fruits may be soaked in alcohol for 30 minutes to rehydrate and sterilize them.

                                Place one apricot half on top of circle of dough on top. Seal around the edges.

                                Bake at 350°F for 10 minutes or until golden brown. Cookies freeze well.

                                Note: For calories per cookie, divide 3528 by the number of cookies made.

                                And for those just plain hungry, I made Moose stew.

                                1 lb. cubed moose or elk stew meat
                                Salt and Pepper to taste
                                Flour
                                2 1/2 c. boiling water
                                3 tbsp. chopped onion
                                1/4 tsp. garlic powder
                                1 tsp. sugar
                                1/2 tsp. paprika
                                1/2 tbsp. Worcestershire sauce
                                1/2 c. tomato juice
                                1/2 tbsp. fresh lemon juice
                                1 c. pearl onions
                                1 c. diced carrots
                                1/2 c. diced celery
                                1/2 c. diced green pepper
                                1 c. cubed potatoes


                                Directions

                                Sprinkle meat lightly with salt and pepper; add meat tenderizer.
                                Flour meat well; brown in heavy pan, using enough fat to cover bottom of pan. Pour in water; add onion, garlic powder, sugar, paprika, worcestershire sauce, tomato juice and lemon juice. Cover tightly; simmer for 2 hours or until very tender, adding more water as needed. Add vegetables to meat; cook until all are tender. Pour off juices and thicken with flour for gravy; pour gravy over meat and vegetables.
