I know this is late but, Happy New Year everyone!

As most of you know I live in the Mid-Atlantic area, which has been a frozen crap hole tundra since before Christmas. We got hammered by the "Bomb Cyclone" last week and right now we are starting to get hit with a storm that is wintry mix of ice, freezing rain, and snow. My entire winter break was spent largely indoors because we had extreme cold temps wth highs in the upper teens, lows in the lower single digits, and wind chills in the negatives for a few weeks now. I came back to work from break last Wednesday only to be off on Thursday and Friday because of the bomb cyclone. Luckily no power outages, just low temps and nonstop wind with gusts up to 45mph at times. Now I'm just waiting to see if they send us home early because the the evening commute is going to be terrible. I take a train in and out of the city everyday and I just know it'll be delay, delay, delay. Supposedly the extreme cold is on it's way out with temps going up to 55 this week and then falling to the averages by next week.

Anyway I'm just dragging my feet today as I'm sore as hell from a weekend of playing box lacrosse - took one hell of a check yesterday, which sent me flying off my feet and into the boards with a thunderous bang, which I managed to keep my head tucked in so I didn't get a concussion.

Now I'm going to continue to burp up the burrito I had for lunch. Everyone enjoy your day, stay warm, dry, and classy!

Well, I can offer you the 0/0 beer in different variants.

We have those on the shooting range. LOL, but they should be quite cold. Else they may taste no so tasty.

I had this dish this weekend. Yummy!

Preheat oven to 375F.

Saute in 2 Tbsp butter, until the onion turns transparent:

1 chopped onion;
1 finely chop bell pepper.

In a large bowl mix:

1 c yellow cornmeal;
1 tsp baking soda;
1/4 tsp seasoned salt;
1/4 tsp garlic powder;
1/8 - 1/4 tsp cayenne pepper.

In another bowl mix:

2 eggs, lightly beaten;
1 15 oz can creamed corn;
1 4 oz jar pimentos, drained and diced;
1/3 c chapped jalapeno;
1 lb pulled crawfish tails;
1 c shredded cheddar;
1/3 c corn oil;
salted onion and bell pepper;

Stir the above mixture into the cornmeal mix. Bake at 375 in a 9"x13" well greased pan. Bake until a toothpick inserted in the center comes out clean, about 55mins.


My friend served a chunk of this with a few spoonfuls of crawfish étouffée over top. It was heaven in a bowl.

I do love those mudbugs.

Yup. Me n Chuy sometimes drink, and if you drinking with Chuy you better have your chankla ready.
