  • Chicken 'n' Dumplings

    My cornbread poll was popular, so I'm gonna try it again with dumplings. Never met anyone who was neutral on the subject.

    There're two types of (American) dumplings...

    There's Drop Dumplings



    And then there's Rolled Dumplings



    Which is the "right" way to make dumplings?

          I voted drop, to me if its rolled its a noodle lol. Both yummy im sure :)

              I'll try it that way just for you next time comadre!!..I usually drop for fruit dumplings but I make them small...(I do it this way, because when I was learning to make dumplings, my Daddy's mama, my gemawmaw, made drop dumplings, but she made them rather large, as a result the center was never fully cooked, it was a special request from my Daddy, that I roll them out so they would be cooked properly)....so that's why I do it that way...and I just make smaller dumplings when I make fruit and dumplings....they seem to soak up the fruit flavors better and get cooked completely as well...

                  My vote is drop style. I'm with [MENTION=30314]Eagle Plumes[/MENTION]. If it's rolled I think of noodles, or more specifically, spaetzle...



                  I think it's that German/Jewish heritage.

                  Matzah balls = (a type of) dumplings = drop style = goes it soup

                  Spaetzle = (a type of) noodle = rolled out = eaten as a side w/butter or gravy.

                  Both yummy in their own ways!!!

                    hi you did not give a choice of pull and pat thats the way we do it around here mix the dumpling cool pull a dumping and pat it out in your hand and drop

                      Dropped!! Dumped...as in DUMPlings....lol

                      I do think it's a noodle, if it's rolled....but not like spaetzle...we drop our spaetzle as well.

                        Interesting! I don't think I've ever heard of drop-style spaetzle. Do y'all saute/fry them after they've been parboiled?

                          No, I've never seen fried spaetzle, but frying makes anything taste better. LOL

                          The way the German side of my family makes spaetzle dough, it's way too sticky to roll. It just gets pushed to the side of the bowl, then "cut off" the side of the bowl with a wet butter knife and dropped in the boiling water.

                          I've seen other people push spaetzle dough through the holes in a colander, so I would call that "dropped" too.

                          Here's my favorite kind of dumplings and you can roll them all you want.

                            After we parboil the spaetzle, we fry them real quick in butter (just for a couple minutes). Makes 'em deliciously greasy/fatty and adds to their mouthfeel!

                              Now here you are sounding like my mother,,, dammmm she used to do that too and it caught on with me too!!! I fry them a day later and then add meat to it with a thick gravy to cling to the whole thing!!!
